- 3 to 4 sprigs of fresh flat-leaf parsley (I use quite a bit because it makes all the difference)
- 400 g of carrots cut into chunks (make sure they’re nice and crunchy)
- 100 g of eating apples, like Royal Gala or Pink Lady, cut into small pieces
- 10 g of lemon juice (it prevents the apples from browning, plus it adds pep)
- 15 g of olive oil (no need for too much, otherwise it masks everything)
- 10 g of balsamic vinegar
- 10 g of citrus vinegar (if you have it, if not just balsamic works too)
- ½ teaspoon of salt (adjust to your taste, I go easy)
- 2 pinches of ground pepper (I like it to tickle a bit)
- 50 g of raisins (the little juicy sweet touch that I find indispensable)

Detailed preparation of the carrot-apple-raisins salad Thermomix style
- Wash everything well, fruits and vegetables. It’s the minimum, I know, but it’s important! Remove the cores of the apples, cut them into pieces.
- Peel the carrots and cut them into chunks. Now comes the magic moment when I take out my Thermomix, hop, carrots and apples inside. Ta-da! We grate all that in a few seconds, just the right time.
- In a mixing bowl, combine lemon juice, olive oil, balsamic and citrus vinegar, salt, pepper – the homemade vinaigrette we never miss here.
- Pour the grated carrot-apple mixture in, add the raisins and finely chopped flat-leaf parsley. Mix well so everything holds together.
- Taste. Well, here you do as you feel: a bit more salt? A hint of vinegar? Everything is allowed!
