I’ve tried many variations for my strawberry-banana sorbet, but I always come back to this simple recipe with just frozen fruits, a real fruity pleasure without any fuss. Well, I admit that sometimes I skip the sugar, especially when the fruits are very ripe, taste is also a factor.
Blending in the Thermomix is magical: it does all the work and the sorbet usually comes out ready to be enjoyed, perfect for unexpected moments on a scorching afternoon. Well, it still requires planning some freezing time for the fruits, but it’s totally worth it.

Chorizo to spread: the essential recipe to impress your guests with Thermomix®
And then, nothing beats a homemade sorbet, it’s full of flavor, natural, and doesn’t hit the wallet like those often overly sweet industrial ice creams. So here’s my version, and then you do as you like, okay!
Essential ingredients for a strawberry-banana sorbet with Thermomix
- 200 g of frozen strawberries – mine often come from the local market, I find they have more flavor than supermarket ones.
- 200 g of ripe bananas frozen in pieces – remember to cut them before freezing, it’s less of a hassle later.

Detailed preparation for an awesome sorbet with Thermomix
- Dump the strawberries and banana pieces into the Thermomix bowl. I like to alternate the layers, but honestly, you can put everything in randomly.
- Set your Thermomix to speed 9 for 1 minute. Halfway through, scrape the sides with the spatula, otherwise the blending is uneven (yes, it happened to me the first time, no worries).
- Taste it; now’s the moment to see if you want to add a bit of sugar or a splash of lemon juice, depending on your mood and the ripeness of the fruit.
- Pour your sorbet into a bowl or container and freeze for 1 to 2 hours to get the perfect texture. Well, I often check its progress every 30 minutes because I love tasting it early.
Essential utensils for your fruity sorbet with Thermomix
- A Thermomix obviously, which does everything – blending, scraping, transforming.
- A spatula for scraping the sides, indispensable.
- A container to place the sorbet in the freezer, prefer a wide container for even freezing.
Little tips to succeed with your strawberry-banana sorbet
- Don’t blend too long at the start, otherwise you get a very soft puree, and that’s less cool.
- Freeze bananas in pieces as soon as they are ripe, it’s great for texture and flavor.
- Lemon is optional but adds a little kick that enhances the fruity taste, especially if you prefer less sugar.
Tasty variations for a different but just as delicious sorbet
- Add a handful of fresh mint leaves at the blending stage, it’s the guaranteed freshness touch.
- Replace the banana with mango for a more exotic sorbet.
- Add a bit of coconut milk for a creamier version (perfect for those who enjoy plant-based milk).
Honestly, I find this strawberry-banana sorbet to be a true breath of fresh air during hot summer days. This recipe often reminds me of moments of shared happiness with family, around a garden table, just after a barbecue.
And it’s super quick to make too. The essential thing is to have the fruits ready in the freezer. I always recommend prepping in advance, rather than winging it, otherwise it’s guaranteed to be a hassle.
In short, go for this recipe, modify it, improvise, that’s the magic of homemade sorbets. You’ll see, it makes a little impression and satisfies everyone, even the most skeptical guests.

Notes
- Add a small spoonful of lemon juice: it awakens the taste of the strawberry, prevents the banana from browning, and makes the sorbet fresher and more balanced.
